Abstract

Essential basil oils, produced by supercritical CO2 extraction respectively steam distillation from raw material of different proveniences (Albania; Egypt; basil customary in the Vietnamese cookery purchased from an Asian food store) were analysed by HPLC and GC for methyl chavicol, eugenol, methyl cinnamate, methyl eugenol, linalool, a-pinene, b-pinene, 1,8-cineole, camphor, trans-caryophyllene, geraniol and terpinen-4-ol. For the purpose of examination of basil oil HPLC has been an unusual method. It was found to be a valuable addition to the GC analysis and lead to characteristic „fingerprints“ for the different types of basil oils. From the same batch of raw material CO2 extraction gave a smaller yield of oil and constituents compared with the steam-distillation. Basil CO2 extracts are not considered direct substitutes to steam-distilled essential oils; rather, they are specialty products employed in the creations of flavours for products which require an especially fine sensory profile.

 

Zusammenfassung

Durch superkritische CO2-Extraktion bzw. Wasserdampfdestillation hergestellte etherische Öle aus Basilikum unterschiedlicher Provenienzen (Albanien; Ägypten; ein in der vietnamesischen Küche gebräuchliches Basilikum aus einem Asia-Laden) wurden mittels HPLC und GC auf Methylchavicol, Eugenol, Methylcinnamat, Methyleugenol, Linalool, a-Pinen, b-Pinen, 1,8-Cineol, Campher, trans-Caryophyllen, Geraniol und Terpinen-4-ol untersucht. Die in der Basilikumanalytik bisher unübliche Methode HPLC erwies sich als wertvolle Ergänzung zur GC und ergab bei den unterschiedlichen Öltypen charakteristische „Fingerprints“. Bei gleichem Ausgangsmaterial führte die CO2-Extraktion zu geringeren Öl- und Inhaltsstoffausbeuten als die Wasserdampfdestillation. Aus wirtschaftlicher Sicht können Basilikum-CO2-Extrakte Wasserdampfdestillate nicht ersetzen, stellen jedoch Spezialitäten dar, die sich zur Entwicklung von Lebensmittel- und Kosmetikprodukten eignen, die ein besonders feines Aromaprofil benötigen.
