Zusammenfassung

In Deutschland wird die Verwendung von Vanille und Vanillearomen nur für einige Handelsprodukte durch entsprechende Vorschriften geregelt. Um einen orientierenden Eindruck im Hinblick auf eine mögliche Verfälschung oder Irreführung zu erhalten, wurden Lebensmittel und Kosmetika mit Vanille oder Vanillearoma im Handel angekauft und mittels HPLC auf natürliche, naturidentische und künstliche Aromastoffe hin überprüft. Dabei zeigten sich bei sechs von insgesamt vierzehn Proben irreführende Bezeichnungen, Angaben oder Aufmachungen. Darüber hinaus ergaben sich Hinweise, dass in milchhaltigen Lebensmitteln Vanillin und p-Hydroxybenzaldehyd zu ihren korrespondierenden Säuren Vanillinsäure und p-Hydroxybenzoesäure oxidiert werden können.

 

Abstract

In Germany the use of vanilla and vanilla flavourings is regulated only for some commercial products. To get an orienting impression with regard to a possible adulteration or deception, food products and cosmetics containing vanilla or vanilla flavourings were commercially purchased and examined for natural and synthetic flavouring compounds by  means of HPLC analysis. The results showed that six from altogether fourteen samples had misleading designations, statements or labels. In addition to this, evidence suggests that vanillin and p-hydroxybenzaldehyde can be oxidised in products which contain milk to their corresponding acids, vanillic acid and p-hydroxybenzoic acid. 

 

Résumé

Conformément aux prescriptions, l’utilisation de la vanille et des arômes de flaveur vanille pour certains produits commercialisés en Allemagne est réglementée. Pour se donne un point de vue en ce qui concerne les possibilités de falsification et d’induction en erreur, des produits alimentaires et cosmétiques comportant de la vanille et des arômes de flaveur vanille ont été achetés dans le commerce et contrôlés par la chromatographie liquide à haute performance (CLHP) sur leurs composants aromatiques naturels, de nature identique et artificiels. Il s’avère que sur une totalité de quatorze échantillons, six d’entre-eux comportaient une désignation, déclaration ou présentation induisante en erreur. Dans les produits laitiers, il a été constaté que la vanilline et l’aldéhyde p-hydroxybenzoïque peuvent être oxydés en leurs acides correspondantes, l’acide vanillique et p-hydroxybenzoïque.
